The article discusses research works conducted by the U.S. Agricultural Research Service (ARS) on the elimination of such viruses as Escherichia coli, Salmonella and Campylobacter to ensure food safety, particularly in poultry and beef products. According to ARS scientist Pina M. Fratamico, the bacteria could produce various kinds of Shiga toxin that can make a person ill. Among the members of the ARS team are Connie E. Briggs, Yanhong Liu and Xianghe Yan.
